Every ale we serve is from a local Sussex brewer, and the choice changes with the seasons.

Shooting Star 3.8% A Chestnut Amber bitter with malt, toffee, and blackcurrant in the mouth. Fresh lemon / floral hop aroma with a mellow, balanced aftertaste. |

Gold 3.8% A light golden Bitter full of hoppy flavour and aroma. Generously hopped for extra bouquet. |

Black 3.5% Made with 6 speciality grains, It's aroma and taste is of sweet roasted malt, coffee and lightly burnt caramel. With a creamy mouthfeel and low carbonation it's lightly hopped for a smoothly dry, bitter toffee finish. |

Partridge Best Bitter 3.8% A Best Bitter brewed in a traditional Sussex style using Maris Otter, Crystal and Chocolate malts with East Kent Golding hops. Typical of Dark Star ales, the Best Bitter relies on the heavy-handed addition of aromatic hops late in the boil. |

Hophead 3.8% An extremely clean-drinking, pale golden ale with a strong floral aroma and elderflower notes from the Cascade hops. This beer is full-bodied and full-flavoured yet gentle enough to make it a favourite session beer for many. |

Golden Bine 3.8% A lovely golden yellow beer with floral lemon fragrance and soft citrus flavours and a sharp dry finish. Brewed with Pearl malt and a touch of wheat, combined with Golding and Fuggle hops. |

South Downs Bitter 3.2% Amber coloured with full hop flavour and aroma, and a hint of orange citrus in the mid palate. Available from January 12th |

Castle 3.8% A tawny coloured beer with a hoppy aroma. The flavour has a good balance of malt, fruit and hops with a dry, hoppy finish. |

DB One 4.2% A refreshing light amber ale with a full fruity, hoppy flavour and a long satisfying medium bitter finish. Available from February 12th |

Golden Gate 4.5% This beer started the Dark Star love affair with North American hops, using varieties grown along the west coast of the States. With less hops, it's not as extreme as the classic American pale ales but still full of the zesty spice of New World hops. Available from February 12th |

Oatmeal Stout 4.5% A delicious blend of malts provide this dark stout with a smooth finish, with coffee and caramel tastes being complemented by a hint of blackcurrent provided by Bramling Cross hops. |

Winter Solstice 4.2% The rich bronze colour is derived from the mix of Munich, Maris Otter, Crystal and Black malt. Most of the bittering is from Atlas hops while the wonderfully fruity Galena hops are used at the end of the boil for the aroma. A tiny amount of seasonal spices are used for a hint of Christmas, warm fires and good cheer. Available from December 11th |

Arundel Old Ale 4.4% A wonderful dark old ale. It has a nice roast malt aroma that carries through in the taste. The finish is smooth and fruity with hoppy bitterness. Available from October 11th |

Best Bitter 4.2% A copper auburn coloured beer with malty, fruity hoppy aromas. Full bodied, with soft fruit flavours and a dry finish. Our original brew, and still best seller, Best Bitter won Gold at the S.E. SIBA Brewing Competition 2008. |

Madgwick Gold 5.0% A traditionally brewed, dark and creamy mild. Its low gravity and low hop rate gives a slightly sweet character. Available from February 12th |

Red India Ale 5.0% Delicious - like hot buttered toast with hints of fruit cake, with a malty, caramel finish and a pleasing bitterness. Similar to an IPA - strong hoppy beer, red in colour. |

Northdowns Bel 5.5% A smooth strong Belgian style ale. Complex combinations of flavours - malt, caramel, raisins, dates, woodiness, biscuit. The sweet flavours hit you straight away, but this immediately dissipates into a light bitterness, with a smooth mouthfeel. Available from January 12th |

Ruby 5.2% A strong, dark winter warmer with a smooth, rich, toffee and caramel flavour laced with a hint of banana on the nose. Recently voted the best beer at the North Surrey CAMRA festival in the Old Ale & Strong Mild category |

American Pale Ale 4.7% The yeast strain used for the brewing of this American style pale ale is specially imported from the USA, along with Cascade, Centennial and Chinook hops. The low colour Maris Otter malt provides a perfect light colour and dryness to complement the crisp taste and full aroma of the hops. Seriously full of hops. |

Oktoberfest 5.2% A cask version of the classic Oktoberfest-Märzen. Brewed with specially imported German malts, including Carahell and Cara-Munich for depth of colour and flavour. Noble hop varieties are added at three stage stages during the boil. Available from October 11th |

Nyewood Gold 5.0% Auburn bronze Premium ale with malty barley sugar and spicy hop aromas and a smooth creamy flavour with soft fruits throughout with a tasty balanced finish. |

Demon 5.5% Brewed for Ballard's Brewery's 20th anniversary in July 2001, Duadekademon, meaning two decades, contains all the malts, pale ale, crystal and chocolate, and all the hops, fuggles, goldings and phoenix, which are regularly used in all our brews. The tawny golden beer has a rich and delicious complexity of aromas and flavours - best referred to simply as "Demon" for repeat orders after the first pint! Available from November 11th |
